Date Night Cod with Roasted Garlic Mash and Lemon Spinach

Date night is upon you, but never fear. Our sophisticated midweek supper for two has the answer – and no need to spend all evening in front of the cooker.
  • 2 cod loins (about 150g each)
  • 1 tbsp olive oil
  • 1 x 109g pack Idahoan Roasted Garlic Perfect Mash
  • 120g baby spinach leaves
  • 1 lemon, half juiced, half cut into wedges
  1. Preheat the oven to 190°C, 170°C fan, Gas Mark 5. Place each cod loin into the middle of a square of foil (big enough to create a parcel around the cod). Drizzle over a little oil and season, then lay 2 slices of lemon on top. Seal tightly and place onto a baking tray. Cook for 10-12 minutes, until the cod is just cooked.
  2. Meanwhile, prepare your Idahoan Roasted Garlic Perfect Mash to packet instructions.
  3. Just before the cod is ready, place the spinach into a microwave-safe bowl and cook for 30 seconds, or until wilted. Mix together with the lemon juice, remaining olive oil and some salt and pepper to taste. Serve the mash together with the fish, spinach and a wedge of lemon.
  4. TIP: Serve with a glass of something nice and the promise that you’ll do the dishes. You’ve just owned date night, and all thanks to some Idahoan Roasted Garlic Perfect Mash.
