Your guests will think you spent hours on these ludicrously tasty hors d’oeuvres.
Ingredients
  • A little oil, for greasing
  • 130g pancetta or chopped bacon
  • 1 x 109g Idahoan Butter & Herb Perfect Mash
  • 1 tbsp oil for greasing
  • 1 medium egg, beaten
  • 90g mature cheddar cheese, grated
  • 2 tbsp chopped fresh chives
Instructions
  1. Preheat the oven to 200°C, 180°C fan, Gas Mark 6 and grease two fairy cake tins. Place the pancetta into a pan and cook over a medium heat for 5 minutes until golden.
  2. Prepare the Idahoan Butter & Herb Perfect Mash to packet instructions. Combine the mash with the egg, 75g cheese, chives and ¾ of the cooked pancetta. Season with salt and pepper. Spoon a tablespoon of the mixture into each round of the tin. Sprinkle the remaining cheese over the top and pop in the oven for 25-30 minutes or until golden brown.
  3. Remove the puffs from the tin whilst still warm and serve with the remaining pancetta and some sour cream on the side, plus a scattering of extra chives.
  4. TIP: You can replace the bacon or pancetta with whatever you like, such as chopped cherry tomatoes or capers and smoked salmon. Kids love these too, and you could even try sneaking some veggies in there and serving them with ketchup. If you don’t have two fairy cake tins. Simply cook the mixture in one, remove the puffs after cooking and spoon the remaining mixture in and bake.
