A veggie-friendly alternative to the classic beef burger, these mash and veg filled patties are packed with chickpeas, carrot, courgette and Idahoan Mash for a healthier meal that’s ready in just 30 minutes!

Ingredients
For the Veggie Burgers:
  • 1 x Idahoan Buttery Perfect Mash pouch
  • 400g tin chickpeas, drained
  • 1 carrot, grated
  • 1 courgette, grated
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper
For Serving:
  • 4 seeded burger buns
  • 4 cheese slices
  • Little Gem lettuce
  • Mayonnaise and Sweet Chili sauce
Instructions
  1. Prepare Idahoan Perfect Mash according to packet instructions, then allow to cool.
  2. In a bowl, mix the carrot, courgette, chickpeas, olive oil, spices and seasoning.
  3. Spread onto a baking sheet and bake for 10 minutes at 200c.
  4. Mash the roasted ingredients with the back of a fork and mix together with Idahoan Mash.
  5. Form mixture into four large patties and bake in the oven for 20 minutes at 200c.
  6. Serve in buns with the cheese slices, lettuce, mayonnaise, sweet chilli sauce and enjoy!
