Sausage & Cannellini Bean Casserole

A warming and hearty recipe, perfect for family dinners – try swapping out your pork sausages for veggie sausages if you want to make it vegetarian.

Sausage & Cannellini Bean Casserole
Serves: 4
  • 1 x Idahoan Buttery Perfect Mash pouch
  • 1 tbsp olive oil
  • 4 carrots, peeled and diced
  • 8 sausages
  • 1 onion, diced
  • 1 clove of garlic, crushed
  • 400g chopped tomatoes
  • 400g tinned cannellini beans
  • 400ml veg stock
  • 2 bay leaf
  1. Heat the oil in a large casserole dish over a medium heat. Add the sausages and cook for five minutes, turning frequently until browned all over. Remove the sausages from the pan and set aside.
  2. Add the diced onion, carrots, bay leaves and garlic to the pan. Cook over a medium heat for 10 minutes until softened and lightly golden. Add the sausages back into the pan then pour in the tinned tomatoes, stock, beans and smoked paprika. Bring to the boil, season to taste and reduce to a simmer for 15-20 minutes until the sauce has thickened.
  3. Prepare your Idahoan Perfect Mash to packet instructions then serve alongside the casserole and enjoy!
