Rarebit Crumpets

An impressive but quick and easy breakfast recipe, made with crumpets, mash and cheddar cheese, finished with a dash of Worcestershire sauce for a fun take on Welsh Rarebit.

Rarebit Crumpets
Serves: 2
  • 1 x Idahoan Cheddar Cheese Perfect Mash pouch
  • 6 crumpets
  • 1 egg, beaten
  • 100g Cheddar cheese, grated
  • 1 tsp English mustard powder
  • 250g tomatoes on the vine
  • 6 rashers streaky bacon
  • 2 tbsp Worcestershire sauce
  1. Turn on the oven grill to high. Make the Idahoan Perfect Mash according to packet instructions and allow to cool.
  2. Add in your beaten egg, cheese and mustard powder. Mix until incorporated.
  3. Spread out the bacon and tomatoes on a baking tray and slide into the oven to grill. Remove when cooked through.
  4. Toast your crumpets and top with a generous spoonful of the mash mixture, topped with more cheese and grill until bubbling and brown.
  5. Plate up the crumpets, top with the bacon and serve with the tomatoes and a generous amount of Worcestershire sauce.
